Carrot Cake
This Carrot Cake is rich with spices...nuts, pineapple and coconut may be added for a custom order. It is garnished with candied pecans or walnuts, caramelized carrot "flowers" and is finished with a brown butter cream-cheese buttercream.
Salted Caramel Chocolate Cake
This cake is my rich chocolate cake recipe. The Interlayer is Salted Caramel. The Buttercream has been made with rich black cocoa and Baileys Salted Caramel Cream. It has been garnished with home-made salted caramel chocolate bon bons, caramel chips, chocolate curls and Bailey's Salted Caramel Chocolate Ganache
The Margarita Lime Cake
The light vanilla sponge has been infused with lime zest which has been finished off with a Coconut-Lime Buttercream. The Interlayer is Coconut Whipped Cream which makes another appearance on the top of the cake which is garnished with toasted coconut, candied limes, and lime zest.
Victoria Sponge
This wonderful short-cake-like sponge lends itself to being garnished with all kinds of fruits. In this case, there is a strawberry ganache drip, vanilla buttercream and fresh fruits for garnish
Black Forest Cake
When fresh cherries are available, they make a traditional statement. Otherwise, raspberries could be used for this cake. My chocolate cake recipe is used for this cake and then is garnished with the fruits available. Fluffy whipped cream and crunchy cake crumbs provide a multi-sensory experience.
Rum Cake
This Cake has been infused with my custom-made vanilla rum. It is garnished with a rum glaze and candied/rummed pecans.
Spiced Apple Cider Cake
The nicely spiced cake has an interlayer of Apple Caramel, brown butter frosting, and apple caramel drip garnish. Pecans are optional, but may be omitted if nuts are not desired.

This cream-filled chocolate cake is also available as Dairy-Free and Gluten-Free.
The Tunnel Of Fudge!
Definitely a chocolate lovers delight, this cake does not disappoint! The rich chocolte bundt is covered in a Kahlua Chocolate ganache and then a Bailey's cream ganache over and over...
The Maple Cake
The Maple Cake is made with Little Rideau Farm Maple Syrup. The brown butter frosting is maple-infused as well. Nuts are an option and may be omitted
The Grand Marnier Carrot Cake
This Cake has twelve even sections that are filled with Grand Marnier infused cream cheese cream. The crunchy nutty crust provides a tasty base for this cake which has been garnished with caramel, Grand Marnier Cream and Grand Marnier Candied Carrot slices. Candied pecans garnish the sides for extra texture.
The Opera Cake
Layers of almond-infused cake has interlayers of coffee-infused french Buttercream. It has a crumb coat of brown buttercream and then a pouring of Chocolate/Kahlua Ganache, and garnished with espresso chocolate beans. Also available in smaller sizes.
Chocolate Rum Cake
The Rum Cake is also available in rich chocolate with a potent rum glaze and fresh fruits.
The Irish Coffee Cake
The coffee infused cake layers have an intercreme of O'Casey's Irish Cream. The cake is covered in a Kahlua Coffee Glaze and is garnished with Irish Cream Buttercream and a dusting of espresso
Kahlua Chocolate Cake
This chocolate cake has a creamy coffee cream interlayer with crunchy coffee beans surrounded by rich chocolate buttercream. The rich chocolate cake has been imbibed with Kahlua as has the chocolate ganache drip. A coffee and chocolate lovers delight!
